OATMEAL CHOCOLATE CHIP COCONUT COOKIES

For 30 cookies

INGREDIENTS:

  • 1 c brown sugar

  • 1 c granulated sugar

  • 1 c butter

  • 2 eggs

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp vanilla

  • 2 c flour

  • 2 c oatmeal

  • 8 oz chocolate chips

  • 1 c shredded coconut

  1. Set butter aside to thaw to room temperature.

  2. Preheat oven to 400 degrees F.

  3. Once butter is room temperature, cream sugars and butter together; add eggs and beat well.

  4. Add salt, baking powder, baking soda vanilla; mix thoroughly.

  5. Stir in flour and oatmeal.

  6. Add chocolate chips and coconut.

  7. Mold dough into golf ball–size rounds.

  8. Place on greased baking sheet; press down on each ball to slightly flatten.

  9. Bake for 6 minutes.
