CURRIED CHICKEN SALAD

INGREDIENTS:

  • 1 whole rotisserie chicken- deboned & finely chopped

  • 1 large sweet potato- cut into small cubes + 1 Tbsp olive oil, pinch of both salt and pepper

  • 1 green apple- cut into small cubes

  • 3 tbsp chives - chopped

  • 3 tbsp green onions- chopped

  • 2 tbsp currents

  • 3 tbsp rasins

  • 1/3 cup slivered almonds

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. peel and cut the sweet potato into small cubes, toss with 1 tbsp olive oil and a pinch of both salt and pepper. Mix well then pour onto the lined baking sheet and place into the oven. Roast for 15-20 minutes (you want them to be browned and tender). Set aside to cool.

  2. Once sweet potato is cooled and chicken is deboned and finely chopped- place the INGREDIENTS into a large dish.

  3. Make the curry sauce then pour over the top. mix well, then using a fork, continue to mix- braking up the chunks of chicken so that EVERYTHING is well coated with the sauce. Serve cold or at room temperature as a sandwich, over a salad or scooped into lettuce cups.

Curry Sauce:

  • 3/4 cup full fat greek yogurt

  • 1/3 cup mayo

  • zest + juice 2 limes

  • 2 tbsp honey

  • 3 tbsp curry powder

  • pinch of both salt & pepper

*Mix all the ingredients together. Taste and adjust as necessary for preference.
