INGREDIENTS:
1 head radicchio - pulled apart
1/2 cup fennel -thinly sliced
3/4 cup Honeycrisp apple -thinly sliced
1 persimmon -thinly sliced
1/2 candied pecans
1/3 cup blue cheese- crumbled
2 tbsp chives -choppped
*Add all ingredients into a large bowl & set aside to make dressing. Once dressing in mixed, pour over the salad, mix and top with fresh cracked pepper.
salad dressing:
1 tbsp shallot - minely minced
2 tsp grain mustard
1 tsp dijon mustard
2 tsp apple cider vinegar
1 tbsp honey
1 tsp orange zest
1 tbsp orange juice
1 tsp fennel seeds
pinch of both salt and pepper
2 tbsp olive oil
*whisk all the dressing ingredients together in a small bowl until well combined. Taste and adjust accordingly to your preference.
