SAUTÉED LEMON GARLIC SHRIMP WITH CHIMICHURRI

INGREDIENTS FOR CHIMICHURRI:

  • 1/4 c parsley

  • 1-1/2 c fresh cilantro

  • 1 tbsp fresh oregano

  • 4 cloves of garlic

  • 1 tbsp lemon juice

  • 1/2 tsp red pepper flakes

  • 1/4 tsp salt

  • 1/4 c olive oil

  1. Rinse parsley and cilantro to clean.

  2. In a food processor place the parsley, cilantro, oregano, peeled garlic cloves, lemon juice, red pepper flake, salt and olive oil.

  3. Blend for about 3 minutes for the ingredients to combine.

INGREDIENTS FOR SHRIMP:

  • 1 lb shrimp

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 small lemon, juiced

  • salt and pepper

  1. Devein and wash shrimp; set onto a paper towel to absorb water.

  2. Season with salt and pepper.

  3. Heat a large sauté pan to medium/high heat.

  4. Add butter; once melted, add shrimp. Cook for 2 mins, until light pink. Flip shrimp to cook other side, add minced garlic, olive oil and lemon juice; cook for another 2 mins. Take shrimp out of pan and plate. Continue to cook butter, garlic, lemon juice and olive oil for another minute.

  5. Pour the sauce over the cooked shrimp. Squeeze fresh lemon and drizzle chimichurri sauce over the shrimp.

  6. Enjoy!
