INGREDIENTS FOR CAKE:

  • 1/2 c butter

  • 1 1/3 c sugar

  • 1 egg

  • 2 c flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 c buttermilk

  • 1 tsp vanilla

  • 2 c rhubarb

INGREDIENTS FOR TOPPING:

  • 2 tbsp sugar

  • 3/4 tsp cinnamon

  • 2 tbsp butter

  1. Heat oven to 350 degrees F.

  2. Wash and chop rhubarb.

  3. Place rhubarb into a plastic bag with about 1 tbsp of flour; shake well to coat rhubarb.

  4. In a large bowl, cream butter and sugar; add egg and mix well.

  5. In a separate bowl stir together flour, baking soda and salt.

  6. Slowly mix together butter and sugar mixture with flour, baking soda and salt mixture. Add buttermilk; mix well.

  7. Stir in vanilla and chopped rhubarb.

  8. Pour mixture into a greased and floured 9x13 glass pan.

  9. For topping, mix together sugar, cinnamon and butter until crumbly.

  10. Sprinkle topping over batter.

  11. Bake in preheated oven at 350 degrees F for 35 mins.

  12. Allow to cool completely before cutting and serving.

Serving suggestions:

  • Sprinkle powdered sugar over the top to add garnish.

  • Serve each slice wth a scoop of vanilla ice cream.
