INGREDIENTS FOR CAKE:
1/2 c butter
1 1/3 c sugar
2 c flour
1 tsp baking soda
1/2 tsp salt
1 c buttermilk
1 tsp vanilla
2 c rhubarb
INGREDIENTS FOR TOPPING:
2 tbsp sugar
3/4 tsp cinnamon
2 tbsp butter
Heat oven to 350 degrees F.
Wash and chop rhubarb.
Place rhubarb into a plastic bag with about 1 tbsp of flour; shake well to coat rhubarb.
In a large bowl, cream butter and sugar; add egg and mix well.
In a separate bowl stir together flour, baking soda and salt.
Slowly mix together butter and sugar mixture with flour, baking soda and salt mixture. Add buttermilk; mix well.
Stir in vanilla and chopped rhubarb.
Pour mixture into a greased and floured 9x13 glass pan.
For topping, mix together sugar, cinnamon and butter until crumbly.
Sprinkle topping over batter.
Bake in preheated oven at 350 degrees F for 35 mins.
Allow to cool completely before cutting and serving.
Sprinkle powdered sugar over the top to add garnish.
Serve each slice wth a scoop of vanilla ice cream.
