For 12 servings
5 lbs Gravenstien or Granny Smith apples
1 large lemon
2 tbsp cinnamon
1 c oatmeal
1/2 c flour
1/2 c sugar
1/4 tsp salt
5 tbsp cold unsalted butter
Preheat the oven to 350 degrees F.
Peel, core, and cut the apples into large wedges. Zest the lemon snd combine the apples with 1 tbsp cinnamon, the zest and juice from the lemon. Mix together well and pour into a 9 by 14 by 2-inch oval baking dish.
In a separate bowl mix together oatmeal, flour, other 1 tbsp cinnamon, sugar and salt. With a cheese grater, grate the cold butter into the mixture and mix together well. Pour the dry ingredient mixture over the apples evenly.
Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm with a scoop of vanilla ice cream.
