CRISPY BRUSSELS SPROUTS WITH PEANUT BALSAMIC GLAZE
For 2 servings
1 bag of Brussels sprouts
2 tbsp olive oil
2 tbsp peanut butter
1 tbsp honey
2 tbsp balsamic vinegar
2 garlic cloves, minced
1/4 tsp crushed red pepper
salt and pepper
1 tbsp fresh cilantro
1 tbsp crushed peanuts
Preheat oven to 400° degrees F.
Wash and cut Brussels sprouts in half (smaller ones) or quarters (larger ones).
Place onto a baking sheet, drizzle with 1 tbsp olive oil; sprinkle salt and pepper. Mix well.
Cook Brussels sprouts for 15 mins, stirring often to ensure equal cooking and no burning.
Meanwhile, in a small bowl mix together peanut butter, honey, balsamic vinegar, olive oil, minced garlic cloves and crushed red pepper.
Once the Brussels sprouts are browned and tender, pour sauce over the top and mix well. Place into a bowl and garnish with chopped cilantro and crushed peanuts.
