Recipe inspiration from Home Chef: Alison Wu, Portland, OR.

INGREDIENTS:

For 2 servings

  • 3 blood oranges

  • 1 orange

  • 1 grapefruit

  • 1 small avocado

  • 1 watermelon radish

  • 1 tsp lemon juice

  • 1 tsp olive oil

  • 1 tsp fresh dill

  • 1 tsp chopped hazelnuts

  • pinch of salt

  • pinch of lemon zest

  1. Cut skin off all the oranges, grapefruit and avocado.

  2. Cut oranges, grapefruit, avocado and watermelon radish into thin circular slices.

  3. Layer onto serving plate.

  4. Mix together lemon juice and olive oil. Drizzle mixture over slices.

  5. Sprinkle chopped dill and hazelnuts over salad. Finish with a pinch of salt and lemon zest sprinkled over the top.
