INGREDIENTS:

  • 1/2 c peanut butter
  • 1/2 c light coconut milk
  • 2 garlic cloves
  • 1 tbsp grated ginger
  • 1/4 c water
  • 3 tsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 1 tbsp red chili flake paste
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar 
  • 1 tbsp red chili flakes (more or less depending on how spicy you prefer)
  1. Place all the ingredients into a blender and blend until smooth. 
  2. Store in an airtight container in the refrigerator for up to 2 weeks.

This peanut sauce is used in my RAW VEGAN PAD THAI recipe. It is also great as a dip for veggies, spring rolls or to pour over rice!
