SHAVED BRUSSELS SPROUTS & GRAPE SALAD
For 4 servings
1 lb brussels sprouts
1.5 c red grapes- sliced
1/2 c slivered almonds
1/2 c finely grated parmigiana- reggiano cheese
1 large lemon- juiced
3 tbsp extra virgin olive oil
1 tsp red wine vinegar
1 tsp honey
1/2 tsp black pepper
Using a mandolin or sharp knife, cut the Brussels sprouts into really thin shreds. Rinse them with cold water and dry well in a salad spinner.
In a large bowl mix together lemon juice, olive oil, red wine vinegar, honey and black pepper- set aside.
Add the sliced grapes, grated parmigiana cheese and slivered almonds to the shaved Brussels sprouts. Pour the dressing and mix everything together really well.
Enjoy immediately or store in refrigerator for up to 2 days.
