KALE SALAD WITH FRUIT & LEMON POPPY SEED DRESSING

For 2 servings | Vegetarian

INGREDIENTS FOR LEMON POPPY SEED DRESSING:

  • 1/2 lemon, juiced
  • 1 tsp Dijon mustard
  • 1 tsp grainy mustard
  • 1 tsp honey
  • 1/2 tsp apple cider vinegar 
  • 1 tbsp olive oil
  • 1 tsp poppy seeds
  • pinch each of salt and pepper

Place all ingredients into a bowl and whisk everything together until well combined.

INGREDIENTS FOR SALAD:

  • 1 bunch of dino kale
  • 1/2 lemon
  • handful of blueberries
  • 1 peach 
  • 1 tbsp pine nuts
  • 2 tbsp goat cheese 
  1. Wash and pat dry kale leaves. Slice into 1/4-inch thick slices. Place sliced kale into a large bowl and squeeze the juice the lemon over the top. With clean hands, massage the kale for about 3 mins, until kale is dark green and wilted. Set aside while you prepare the rest of the ingredients. 
  2. Wash blueberries and peach. Cut the peach in half, remove the seed and then cut each half into thin slices. Cut 1/2 of the blueberries in half, leaving the others whole. 
  3. When ready to assemble salad, take kale out of the large bowl and squeeze any excess liquids  from the leaves. Place into a fresh bowl. Mix together kale, blueberries, peaches, Lemon Poppy Seed Dressing, pine nuts and goat cheese. Serve immediately.
