CRISPY CAULIFLOWER STEAKS with CHIPOTLE HUMMUS

INGREDIENTS FOR CAULIFLOWER:

  • 1 medium cauliflower head

  • 1 tbsp olive oil

  • 1/2 tsp cayenne pepper

  • 1/2 tsp paprika

  • 1/2 tsp salt & pepper

  1. Preheat oven to 425 degrees.

  2. Wash and cut cauliflower in 1-inch slices across entire head to create cauliflower "steaks."

  3. Place cauliflower steaks on baking sheet; drizzle with olive oil and sprinkle with cayenne pepper, paprika, salt and pepper.

  4. Bake in oven for 20 mins. Flip after 10 mins so that the cauliflower does not burn.

INGREDIENTS FOR CHIPOTLE HUMMUS:

  • 2 c garbanzo beans (soaked or canned)

  • 2 cloves of garlic

  • 1/3 c tahini

  • 1 chipotle chile

  • 1 small lemon

  • 1/3 c olive oil

  • 1 tsp salt

  • 1/2 tsp cayenne pepper

  • 1/3 c warm water

  • 1/2 tsp paprika

  1. In a food processor toss in garbanzo beans, garlic cloves, tahini, chipotle pepper, juice from lemon, olive oil, salt and cayenne pepper.

  2. Blend everything together until smooth. Add water as necessary to achieve desired consistency.

  3. Spread chipotle hummus onto a plate. Once cauliflower is crispy and tender place on top of the hummus. Drizzle olive oil over cauliflower and sprinkle with paprika, salt and pepper.
